Salmon tartare on broccoli and peppers salad

Ingredients

1600 g Salmon fillet very fresh, in cubes
4 Biolime, juice and peel
4 EL Olive oil
800 g Broccoli, florets
4 Paprika, orange in pieces
4 Apple, cored in pieces
4 EL Olive oil
4 EL White balsamic vinegar
4 TL Spicy mustard
4 EL Maple syrup
160 g Pine nuts roasted
Salt, Pepper

Preparation

Emulsify olive oil with lime juice, lime zest, salt and pepper in the SPEEDWING® multi chopper with the whisk insert. 
Pour over salmon fillet cubes and marinate for about 1 hour. 

Chop broccoli florets, bell bell pepper and apple cubes in portions in the SPEEDWING® multi-shredder with the chopping insert. Add roasted pine nuts, olive oil, vinegar, mustard, maple syrup, salt and pepper, mix everything well and let it marinate for at least 30 minutes. 
Grind the salmon cubes in the SPEEDWING® multi-shredder with the cutting insert, season again and serve with the broccoli salad.
