Kiwi with passion fruit pudding and brittle

Ingredients

4 Kiwi
400 ml Passion fruit juice
1 Packet vanilla pudding pulver
100 g Sugar
50 g Almonds, chopped
50 g Sugar
2 EL Passion fruit juice
15 g Flour
20 g Butter liquid

Preparation

Take a few tablespoons of passion fruit juice and mix the vanilla pudding powder with it.
Bring the rest of the juice to the boil with the sugar, remove from the heat, stir in the custard powder and cook for 1 minute.
Pour the pudding into cold rinsed ramekins and refrigerate for at least 6 hours.

For the brittle:
Mix passion fruit juice, almonds, flour, sugar and butter and refrigerate.
Peel kiwis, cut in half and slice with Rapido slicer.
Place 1 heaping teaspoon of the brittle mixture on a baking tray lined with baking paper, spacing them sufficiently apart. Bake in the oven preheated to 200°C on the middle shelf for 4-5 minutes until golden brown. Remove from the oven and let stand for a moment. Turn the pudding out onto a plate, place the kiwi slices and decorate with the brittle.
