Beet Salad with Wasabi Cream Cheese Dumplings and Nut-Ginger Dressing

Ingredients

Dressing:
1 Stück Grate a nut-sized piece of ginger finely
3 EL Lemon juice
6 EL Vegetable broth
1 TL Honey
3 EL Nut oil
For the salad:
600 g Red, yellow, and white beets
1 Apple
150 g Cream cheese 20%
2 TL Wasabi paste or -pulver
1 Federation Chives
10 g Walnuts
Salt
Pepper

Preparation

Combine the dressing ingredients and mix well. Season with salt and pepper to taste.
Peel the beets and use the SPIRALFIX® on level I to create spiral shapes. Place them in separate bowls and marinate with one-third of the dressing.
Mix the cream cheese with wasabi until well combined. Using two teaspoons, shape the mixture into 12 dumplings.
Cut the chives into small pieces and roughly chop the walnuts.
Remove the core from the apple using a PRIMELINE apple corer and use the SPIRALFIX® on level I to create spiral shapes. Arrange the apple spirals, beets, and cream cheese dumplings on plates. Sprinkle with chives and walnuts. Drizzle with the remaining dressing and enjoy.

Tip:
Since red and yellow beets release a lot of color, it's recommended to wear gloves when handling them.
If you prefer a vegan option, you can make the wasabi dumplings using soy cream cheese.
